KOL HASHONEH HALACHOT BECHOL YOM MUVTACH LO SHEHOO BEN HAOLAM HABA

From Kitzur Shulchan Aruch Mekor Chaim:

1. The Torah praises Eretz Yisrael and its fruits with the famous Pasuk that states the Shivat HaMinim (Seven Species) in Devarim 8:8, which is where we learn which fruit is best to use when saying the Beracha of “Boreh Pri HaEtz” (From first to last: Olives, Dates, Grapes, Figs and Pomegranates). For example, if one has apples and grapes in front of them, they must say the Beracha of Etz on Grapes and have in mind to fulfill the obligation of saying a Beracha for apples (and then bite into grapes first).

2. If one has many types of fruits that are not from the Shivat HaMinim, such as apples and oranges; they should take the fruit that is most wanted out of the group and say the appropriate Beracha for it while having in mind all the other fruits as well. Unless there is no other specie (like a fruit from the ground which has a different Beracha), one does not need to say another Beracha of Etz for the other fruit.
