From Yalkut Yosef:
1. We light candles to respect Yom Tov (Rosh HaShanah). When
one does the candle lighting, he/she should say the Beracha (blessing:
“…Lehadlik ner shel yom tov.”) and then light the candles, even if Rosh
HaShanah falls on Shabbat Kodesh.
2. The minhag (custom)
of all Yisrael is to eat both nights special fruits and vegetables that have
signs of sweetness and good taste to begin the year with a sweet taste. The
Gemara says to bring “lubya” (green beans), “Dla’at” (pumpkin), “Tered”
(spinach), and “Tmarim” (dates). Also pomegranates, apples dipped in honey, and
the head of a Keves (lamb) have been added to this minhag.
