1. Each person has a chiyuv to recite 100 brachot everyday. If one prays in a minyan 3x a day then automatically he reaches 57 alone from the 19 in amida (shacharit, mincha & arvit). Take the 7 from the birkot kriyat shma (3 in shacharit and 4 in arvit) and 2 from "Baruch SheAmar and Yishtabach". Add in 6 from a single meal, more than 15 from Birkot HaShachar and Birkot HaTorah in the morning, and Brachot on food and Asher Yatzar. You reach 100 easy.
2. During Shabat and YomTov because of the shortened amidot it takes longer to reach 100 brachot during the day. Therefore in many shuls it is normal to say Brachot of Bore Atzei/Isbei BeSamim on Mint Leaves or RoseWater. If one doesn't reach 100, he can take the Brachot of the Aliyot of Torah from Shacharit Shabat and add that in.
Tzadikkim and Mekubalim are asked randomly during the day what bracha they are up to and they answer "75" or "49" because they are so detailed with every action they do.
