L’yilui Nishamt Avraham ben Ester ZT’L and Moshe ben Amelia Z'L.
From Yalkut Yosef:
1. After doing Netillat Yadayim and saying the Beracha of Hamotzi on bread, one should take off a piece of bread from the loaf from a place where the bread was baked well. If the bread was burnt a little, one should not cut into that part to take the first bite, rather they should take from the part that was baked best, so the Beracha will be said on a pleasant and acceptable piece of bread.
2. Before saying the Beracha one should cut a small piece of
bread as if they are beginning to cut off a piece and the begin the Beracha.
After ending the Beracha of Hamotzi one should completely take out that piece
they were beginning to rip off and bite into it. On Shabbat and Yom Tov one should
avoid completely the act of ripping before saying the Beracha.
