Translated from Yalkut Yosef Online:
1. One who eats Matzah on Pesach only blesses “HaMotzi Lehem
Min Ha’Aretz.” However, if one blesses on the Matzah “Asher Kideshanu
BeMitzvotav VeTzivanu Al Achilat Matzah,” this person says a Beracha Levatala (Beracha said in vain)
and one may not answer Amen after hearing this Beracha. This Beracha only applies to Lel HaSeder because that
is when one must eat Matzah to fulfill the Mitzvah and all other days of Pesach
is voluntary whether one must eat Matzah or not. If one does say this Beracha
they have nothing to support them to allow such a thing.
2. People who eat Matzah only on the first night of Pesach
and all other days of Pesach they do not eat it because they are not sure if it
was baked properly are not taking the correct path to Pesach, especially during
Shabbat and Yom Tov when one should eat Pat
(bread) when Matzah substitutes for bread during Pesach. Therefore, one should
be eating Matzot throughout all of Chag Pesach.
